Two Weeks of Groceries for $30

Some of you may have noticed I took small hiatus from blogging. Over the past couple months, I have undergone some intense life changes. It took a lot of energy to do anything so I put all that energy into finishing the remaining weeks of winter quarter. I made it through with higher grades than I anticipated and now I am ready to take on my last undergraduate quarter at UCSC! Since I now live alone, I am driven to keep better track of how I spend money.

Grocery Outlet Haul

Hey everyone! A little update to go with today’s post about Grocery Outlet: recently, I have been so busy between work and school that I have not been able to do much shopping for food or other goods. I have been eating most of my meals at work or going out to eat. Life is super hectic but also fantastic.

Spiced Tofu Scramble

Since I recently moved, I have not had a lot of time to cook or go grocery shopping. I woke up the other morning really wanting a tofu scramble, but soon realized that I was out of olive oil and Earth Balance. That prompted me to look around the kitchen for what little alternatives were available. I settled on sesame oil and went from there.

Spaghetti with steamed greens

Hey everyone! I have been busy the past couple weeks with the start of my new quarter. I have not been able to search around for product comparisons but here is a quick, simple, and affordable recipe. This must have taken me less than 30 minutes to prepare and cook! All prices listed are from my local Trader Joe’s and total amount for ingredients was around $15. This recipe should make multiple portions and is easy to edit depending on taste. I have started to make meals in large amounts so I have less time to spend in the kitchen during the week.

It is ok to shop cheap

I want to begin by saying I realize that everyone has a different lifestyle and I respect that. Not everyone can afford to buy fresh ingredients everyday/every week or handmade local clothing. This is important to bring up because there are some people who are trying to live a vegan lifestyle, but are criticized when they buy food/products from companies that are low on the vegan friendly list. Some of these companies may offer vegan options but the money is still going to a corporation that does not have animal or human welfare on their mind.

Avocado & toast

Hi everyone! I hope you all are having a positive Monday. I do not have classes and I just found out I passed my stats midterm! I am glad that the work I am putting in is paying off, since it is my last general ed class. Anyways, onto avocado toast.

Hi everyone! I recorded two videos yesterday to put up this week but long story short, I am not sure when I will be posting them… that being said, I still want to make a post since it has been awhile. Stats is really kicking my butt, on top of the reading I have to do for my other two classes.

Kale & Mushroom Tofu Scramble

Hey guys! Here is the tofu scramble recipe I promised. I tried to use as little oil as possible, which did make it slightly dry, but I wanted to try making it a bit “healthier.” I also use cast iron cookware and the tend to have oil already because of the seasoning process. I topped my bagel with a drizzle of olive oil instead of my usual Earth Balance. Tofu scrambles are really inexpensive and one of my standards when it comes to breakfast.

My favorite noodle spot

Hi everyone! I ended up being a lot busier than I thought. This break has been too short (it is a week shorter than normal…) and I was cramming in as much personal time with family and friends as I possibly could. Here is a quick post about one of my favorite places in Santa Cruz to get an inexpensive meal from when I’m on the go or have friends in town.

December Update

Hello everyone! I deeply apologize for not posting much in the past couple weeks. I recently declared my second major and planned out my remaining time at UCSC. It is also finals week this week so needless to say, I have been preoccupied with that. I also put a lot of my funds from the past two months into Christmas and birthday gifts. I have many family and friends who have birthdays around Christmas or in January.
